Time To Get Some Veggies In Your Child’s Diet – Let’s Start With Broccoli

It’s not always easy to convince your kids that they really should be eating their veggies. Kids just don’t get just how healthy they are and how much their growing bodies need the various nutrients, vitamins and even the fibre that are found in fresh vegetables. It is our job as parents to try to build healthy eating habits that will continue well into adulthood.
Broccoli is a great vegetable to fix for your children since most of them like it quite well. From there you can start to expand their produce horizon with other things like cauliflower, carrots and even spinach and the likes. Broccoli has a nice mild flavour no matter how you fix it (steamed, baked, boiled or even raw) which I am sure is part of the reason why kids like it so much.
Quick Tip - If you are serving mashed potato and plain steamed broccoli together at a meal, stick the broccoli in your child’s mashed potatoes, creating a little forest for them.
Start by cooking broccoli in salt water or chicken broth until it is very tender. Steamed broccoli like this is often popular with kids because of the mild flavour. For added fun, top the cooked and drained broccoli with a little marinara sauce. You can also try raw or lightly steamed and cooled broccoli with ranch dip.
A favourite at our house is this Velveeta broccoli casserole. You can make it with fresh or frozen broccoli and the cheese in it makes this dish very kid-friendly. If you don’t have time to put together a casserole like this (even though it’s super quick and easy), you may want to try sprinkling some cheese on the cooked broccoli as soon as you serve it. The heat from the vegetable will melt the cheese, turning it into a gooey cheesy dish. And what child doesn’t love cheese?
Another great side dish to try is this broccoli in cheese sauce recipe. It is sooooo much better than the frozen stuff you can buy at the grocery store. The cheese sauce is very easy to make and will be ready by the time the broccoli is tender.
In the summer time broccoli is also great eaten cold. I already mentioned serving raw broccoli with ranch dip or dressing. Another alternative is to use hummus as a dip. It’s made from ground chickpeas and much healthier than other dips. My 7-year old loves to dip raw carrots and broccoli in hummus and I serve it quite often as a snack or appetizer.
This versatile vegetable is also perfect for various salads. My personal favorite is this cold broccoli salad that has cheese, bacon and mayo in it. It’s not the healthiest dish, but a great way to make sure you and your family get some extra vegetables in your diet.
Here’s another tip. Don’t stop at trying a particular dish just once if your child doesn’t like it. Sometimes it takes kids a while before they enjoy a particular flavour or texture. Instead, wait a few days or even weeks and then make the same recipe again. Make sure your child has at least one bite every time you make it and before you know it he or she will start to eat at least a small portion of the vegetable dish each time. And you never know… one of these days it may become a new favourite.
